Roast potatoes with home-grown garlic

Cut the potatoes into evenly sized pieces, coat them with oil and roast them with rosemary. Add the garlic during the second half of the cooking time so that it softens without browning too quickly.

Method

  1. Heat the oven

    Heat the oven to 210 °C. Line a large roasting tray with baking paper or coat it lightly with oil.

  2. Prepare the potatoes

    Wash the potatoes, peel them if you prefer and cut them into pieces about 3 cm across. Dry them thoroughly.

  3. Start roasting

    Toss the potatoes with the oil, salt, pepper and rosemary. Spread them in a single layer and roast for 25 minutes.

  4. Add the garlic

    Peel the garlic cloves, crush them lightly and mix them through the potatoes. Roast for another 20 minutes, until golden brown and soft in the centre.

  5. Serve

    Taste the potatoes, add more salt if needed and serve at once.

Notes

  • Evenly sized pieces cook more evenly.
  • If you use finely chopped garlic, add it for the last 10 minutes only.
