Pan-fried potatoes with home-grown garlic

Boil the potatoes in their skins and let them cool slightly. Fry them with onion, then add the home-grown garlic for the last few minutes so that it keeps its flavour.

Method

  1. Boil the potatoes

    Boil the potatoes in their skins in salted water for about 20–25 minutes. A knife should pass through them, but they should not fall apart.

  2. Cool and slice

    Drain the potatoes, let them cool slightly, peel them and cut them into slices about 5 mm thick.

  3. Fry the onion

    Heat the fat in a large frying pan. Add the sliced onion and fry over a medium heat for 8–10 minutes, until soft and lightly browned.

  4. Add the potatoes

    Add the potatoes, salt and pepper to the pan. Fry for 10–12 minutes, turning them carefully from time to time so that some of the slices brown.

  5. Stir in the garlic

    Add the finely chopped garlic and fry for another 2 minutes. Stir in the parsley and serve.

Notes

  • You can boil the potatoes a day ahead and keep them covered in the fridge.
  • Turn them carefully while frying so that the slices stay whole.
